I love food but i'm in no way the world's greatest eater, in fact i think many would say i'm the fussiest person going and a plain jane when it comes to food, BUT i don't think there's any tastier combination than chocolate and marshmallows and i have come about a fantastic recipe recently.
Ooey Gooey Rocky Road Cookies

Ingredients
3 cups powdered sugar
2/3 cup unsweetened cocoa powder
1/4 tsp salt
3 extra large egg whites
1 tbsp vanilla extract
2 cups chocolate chips
2.5 oz toasted almonds
1 cup mini marshmallows
Directions
- Preheat the oven to 180 degrees celcius and line two baking trays with parchment paper.
- In a large bowl, sift together the powdered sugar and cocoa powder. Whisk in the salt. Add the egg whites and vanilla extract and whisk until combined. Then stir in the chocolate chips and almonds.
- Portion out the mixture into small mounds on the baking trays and top each cookie with 4-5 marshmallows.
- Leave to stand in the freezer for 5 minutes. (This prevents the mixture from spreading out too much in the oven).
- Bake for 12-13 minutes until marshmallows are golden brown.
- Remove the cookies from the oven and leave them to cool and set for a few minutes.
And voila, you have ooey gooey rocky road cookies!
N.B.This mixture should make approximately 24 cookies.
